Beetroot, Carrot, Apple Salad
•2 good sized beetroots
•2 apples
•2 Large carrots
•1 small red onion
•1 or 2 handfuls of mint
Lemon Olive Oil dressing
•Juice from 1 ½ lemons
•10 tbsp extra virgin olive oil
•Salt and fresh ground black pepper to taste
•½ tsp dried oregano
1.Finely Chop the beetroots, apples, carrots and red onion in to thin match type strips.
2.Drizzle over dressing and sprinkle with mint leaves. Add Feta cheese (optional)
