Flax Sandwich Bread
When you're looking for a gluten free and grain free bread, this is delicious served hot straight out of the oven. Slice and store in the freezer.

Ingredients
120g ground almonds
375g Ground flaxseeds (grind up whole in a processor)
6 eggs
170ml water
75g butter at room temperature
3tsp bicarbonate of soda
3 tbsp lemon juice
1 ½ tsp sea salt
Methods
Preheat oven to 170°C and line a large baking tray with parchment.
Add all the ingredients to a food processor and blend until smooth or mix by hand in a large bowl. The dough will thicken as you mix.
Spoon the dough in to the prepared tin and smooth the top with the back of a wet spoon or spatula. Sprinkle with sesame seeds (optional).
Bake for 30 mins until firm but springy to the touch. Leave to cool on a wire rack then turn it out and slice lengthways to make flat sandwich bread.
