Sweet Treats

Nut Bars

These are my favourite go to snack, which I keep in the freezer. Full of protein, fibre and good fat. You can make them without dried fruit to make them less sweet.

Ingredients

  • 1 cup almonds

  • 1 cup cashews

  • 1 cup walnuts

  • ½ cup almond meal

  • ½ cup shredded coconut

  • ½ cup coconut oil

  • ½ cup almond butter

  • ¼ cup honey

  • ½ tsp vanilla powder or extract

  • ¼ tsp sea salt

  • 1 cup dried cranberries/blueberries/raisins or goji berries (a mix is nice) - Optional

Methods

  1. Soak the nuts in purified water overnight, rinse and dehydrate in the oven at 150°C for 3-4 hours until crispy.

  2. Place the nuts in a food processor and roughly chop until coarse consistency.

  3. Place nuts in a large bowl with almond meal and shredded coconut.

  4. Melt the coconut oil and almond butter until liquid. Add honey, vanilla & salt and poor over the nuts.

  5. Add in the dried fruit and mix well.

  6. Spoon the mixture into a baking tray lined with baking paper. Smooth out and press down hard to make it compact. Refrigerate for 1-2 hours.

  7. Once set, cut in to even sized bars. Keep refrigerated.
