Sweet Treats

Raw Cacao Energy Balls

These are another one we keep in the freezer if you're in the mood for something sweet. Dates, Nuts, Coconut flakes and raw cacao make these an indulgence that's good for you!

Ingredients

  • 1 cup pitted Medjool dates

  • 1 cup mixed raw nuts (almonds, walnuts, cashews, pecans)

  • 1/3 cup raw organic cacao powder

  • 1/3 cup coconut oil

  • ½ cup shredded coconut

  • 1 tablespoon chia seeds


Methods

  1. Soak the nuts overnight, chop to smaller pieces and dehydrate in the oven at 140°C until crunchy - approx. 2 hours.

  2. Once the nuts are ready, soak the dates in hot water for 15 mins to soften.

  3. Whilst the dates are soaking add nuts, cacao, shredded coconut, coconut oil and chia seeds to the food processor and mix.

  4. Next add the dates and process to a smooth paste. If the mixture is too dry, add either a tbsp of filtered water or a little more coconut oil.

  5. Let the mixture sit for 10 minutes and then roll the mixture in to bite sized balls and roll in shredded coconut. Store in the freezer.

Nut Bars

These are my favourite go to snack, which I keep in the freezer. Full of protein, fibre and good fat. You can make them without dried fruit to make them less sweet.
