Breakfast

Oat Free Granola

Some people react to oats as much as wheat so I have formulated this delicious nut based granola that you won't be able to stop eating!

Ingredients

  • 1/2 cup unsweetened coconut flakes

  • 1 cup raw almonds

  • 1 cup raw pecans

  • 1 cup raw walnuts

  • 1 cup sunflower seeds

  • 1 cup pumpkin seeds

  • 3 Tbsp chia seeds

  • 1 Tbsp flaxseed meal

  • 1 1/2 tsp ground cinnamon (optional)

  • 1/3 cup maple syrup

  • 1/4 tsp sea salt

  • 1/3 cup coconut or olive oil

Methods

  1. Soak the nuts and seeds overnight then drain and rinse through thoroughly and leave to dry for an hour then chop the nuts to desired size.

  2. Preheat oven to 160 degrees and position a rack in the centre of the oven and bake the nuts for 2 hours until mostly dried out.

  3. In a large mixing bowl, combine the coconut, nuts, seeds, chia seeds, flax seed, cinnamon, maple syrup, and salt.

  4. Combine the maple syrup and coconut oil and pour over the ingredients and mix well.

  5. Spread the mixture evenly on to a large baking trays covered in non stick paper (maybe 2 baking trays) and bake for approx 40 mins. Keep an eye on it and mix every 10 mins so that all the nuts are evenly cooked.

  6. Increase the oven to 170 degrees for the final 10 mins.

  7. Once the nuts are cooked through, remove from the oven and allow to cool completely. Store in an airtight container.

Nut Bars

These are my favourite go to snack, which I keep in the freezer. Full of protein, fibre and good fat. You can make them without dried fruit to make them less sweet.
