Lunch/Dinner
Beetroot, Carrot, Apple Salad
Beetroot is great for boosting bile production and full of phytonutrients!

Ingredients
2 good sized beetroots
2 apples
2 Large carrots
1 small red onion
1 or 2 handfuls of mint
Lemon Olive Oil Dressing
Juice from 1 ½ lemons
10 tbsp extra virgin olive oil
Salt and fresh ground black pepper to taste
½ tsp dried oregano
Methods
Finely chop the beetroots, apples, carrots and red onion into thin match type strips.
Drizzle over dressing and sprinkle with mint leaves. Add feta cheese (optional).
