Lunch/Dinner

Beetroot, Carrot, Apple Salad

Beetroot is great for boosting bile production and full of phytonutrients!

Ingredients

  • 2 good sized beetroots

  • 2 apples

  • 2 Large carrots

  • 1 small red onion

  • 1 or 2 handfuls of mint


Lemon Olive Oil Dressing
  • Juice from 1 ½ lemons

  • 10 tbsp extra virgin olive oil

  • Salt and fresh ground black pepper to taste

  • ½ tsp dried oregano


Methods

  1. Finely chop the beetroots, apples, carrots and red onion into thin match type strips.

  2. Drizzle over dressing and sprinkle with mint leaves. Add feta cheese (optional).

Nut Bars

These are my favourite go to snack, which I keep in the freezer. Full of protein, fibre and good fat. You can make them without dried fruit to make them less sweet.
